Frozen Australian grass-fed organic sirloin beef, also known as boneless loin. This part is tender and dense, with a layer of fat on one side. There is a strip of cartilage under the fat layer.
It is not as juicy as the ribeye, but it is very suitable for grilling. The sirloin can be grilled or pan-fried at high or low temperatures. In the United States, it is called "New York Strip Steak".
